Chicken Marinade

  • 1 pound boneless chicken thighs
  • ⅓ cup dijon mustard
  • ¼ cup honey
  • 1 tablespoon olive oil
  • kosher salt and pepper to taste

Grilling Baste

  • 3 tablespoons dijon mustard
  • 2 tablespoons honey

Broccoli

  • 4 cups broccoli florets
  • 1 to 2 tablespoons olive oil
  • kosher salt and pepper to taste
  • garlic powder to taste

Garnish

  • chives, for garnish


Instructions

  1. Marinate Chicken: Place the chicken thighs in a bowl or resealable plastic bag. Whisk together ⅓ cup dijon mustard, ¼ cup honey, and 1 tablespoon olive oil, then pour the mixture over the chicken. Marinate in the refrigerator for at least 30 minutes or overnight for best flavor.
  2. Preheat Grill and Prepare Baste: Preheat the grill to high heat. Remove the chicken from the fridge about 20 minutes before grilling to allow it to come to room temperature. In a small bowl, whisk together 3 tablespoons dijon mustard and 2 tablespoons honey to create a basting sauce.
  3. Prepare Broccoli: Toss the broccoli florets in a bowl with 1 to 2 tablespoons olive oil, a generous pinch of kosher salt, pepper, and a sprinkle of garlic powder. Spread the broccoli in a mostly single layer on a grill pan or a double to triple layer of aluminum foil shaped into a tray.
  4. Grill Chicken: Place the chicken on the grill and cook for 5 to 6 minutes per side, or until the internal temperature reaches 165 degrees F. During the last 2 to 3 minutes, brush the chicken with the honey mustard basting sauce.
  5. Grill Broccoli: While the chicken is grilling, place the prepared broccoli on the grill on the other side. Grill with the lid closed, tossing the broccoli every few minutes until charred and golden, about 10 minutes.
  6. Rest and Serve: Remove the chicken and broccoli from the grill. Let the chicken rest for 5 minutes before serving. Garnish with chopped chives if desired and serve immediately.

Notes

  • Marinating chicken overnight will deepen the flavors and make the meat more tender.
  • If you don’t have a grill pan, use foil trays for the broccoli to prevent it from falling through the grates.
  • Be careful not to overcook the chicken; use a meat thermometer to ensure it reaches 165 degrees F.
  • The honey mustard basting sauce is optional but adds a delicious glaze and extra sweetness to the chicken.
