Instructions

  1. Cook pumpkin mixture: Combine the pumpkin puree, water, granulated sugar, and pumpkin pie spice in a medium saucepan. Cook over medium-low heat for about 10 minutes, stirring frequently to blend the flavors. Remove from heat and allow the mixture to cool.
  2. Prepare straining station: Layer 2-3 pieces of cheesecloth inside a fine mesh strainer with plenty of overhang. Place the strainer over a bowl or measuring cup to catch the strained liquid.
  3. Strain pumpkin mixture: Add a portion (about ¼–⅓) of the cooled pumpkin mixture to the cheesecloth-lined strainer. Use a large metal spoon to press the mixture, extracting as much clear liquid as possible into the bowl below without pushing the pulp through.
  4. Extract liquid carefully: Alternatively, gently squeeze the cheesecloth to release liquid, being careful not to force any pumpkin pulp through. Discard the remaining pulp. Repeat until all pumpkin mixture is strained, yielding about 1 ½ cups of liquid.
  5. Combine and simmer: Rinse the saucepan and return the strained pumpkin liquid to it. Add the apple juice and vanilla extract, then simmer the mixture over low heat for about 10 minutes or until it reduces to approximately 4 cups.
  6. Cool and serve: Pour the pumpkin juice into a storage bottle and let it cool to room temperature. Refrigerate until chilled. Serve the juice over ice or warmed, as desired.
