Meat and Seasoning

  • 16 ounces ground beef
  • 1 ounce packet taco seasoning

Beans and Chips

  • 16 ounces spicy jalapeno refried beans (canned)
  • 16 ounces tortilla chips

Cheese and Toppings

  • 1 1/2 cups grated pepper jack cheese
  • 1 1/2 cups grated sharp cheddar cheese
  • Jarred jalapeno peppers (to taste)
  • 1 cup sour cream or Mexican crema
  • 1 tablespoon freshly squeezed lime juice
  • Chopped fresh cilantro, for garnish

Instructions

  1. Cook the Beef: In a large skillet over medium-high heat, cook the ground beef, breaking it apart with a spatula, until browned and fat is rendered, about 5 minutes. Spoon out and discard any fat from the pan.
  2. Season the Beef: Add the taco seasoning and about ¼ cup of water to the beef. Stir and heat on medium until the water evaporates. Remove the seasoned beef to a bowl.
  3. Heat the Beans: In the same pan, add the refried beans and warm them until just heated through, allowing them to loosen up.
  4. Preheat Oven: Preheat your oven to 450 degrees Fahrenheit.
  5. Assemble Nachos – First Layer: On a large oval ovenproof platter or baking dish, spread a layer of tortilla chips. Top with half of the warmed beans, half of the beef mixture, half of the cheese blend, and jalapeno peppers.
  6. Assemble Nachos – Second Layer: Repeat with a second layer of chips, beans, beef, cheese, and jalapenos to build a stacked nacho dish.
  7. Bake Nachos: Place the assembled nachos in the oven and bake for 8 minutes, or until the cheeses are melted and the dish is hot throughout. Remove from oven.
  8. Prepare Sour Cream Drizzle: Whisk together the sour cream, lime juice, and a pinch of salt in a small bowl.
  9. Serve: Drizzle the sour cream mixture over the hot nachos, garnish with chopped fresh cilantro, and serve immediately for best flavor and texture.
