Ingredients
Scale
Chicken
- 1 ½ pounds boneless skinless chicken thighs or breasts
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
Honey Butter Glaze
- 3 tablespoons butter
- ⅓ cup honey
- 1 garlic clove, minced
Topping
- Chopped chives for topping
Instructions
- Preheat the grill. Heat the grill to the highest setting to ensure a good sear and even cooking on the chicken.
- Season the chicken. Pat the chicken dry and season all over with kosher salt, black pepper, smoked paprika, and garlic powder for a flavorful base.
- Grill the chicken. Place the chicken on the hot grill grates. Cook for 6 minutes on one side, then flip and grill for another 6 minutes until the chicken reaches an internal temperature of 165°F and is nicely charred.
- Prepare the honey butter glaze. While the chicken cooks, melt butter in a saucepan over medium heat. Add honey and minced garlic, stirring until the butter melts and the mixture begins bubbling. Remove from heat to prevent burning.
- Brush the chicken with glaze. Bring the glaze to the grill and brush the chicken liberally on both sides. Repeat brushing one or two more times for a sticky, flavorful coating.
- Remove and serve. Take the chicken off the grill and brush with additional honey butter glaze. Sprinkle with chopped chives and serve immediately with your favorite summer side dishes.
Notes
- Use chicken thighs for juicier meat or breasts for a leaner option.
- If you don’t have a grill, you can use a grill pan on the stovetop or broil in the oven.
- Make sure the glaze doesn’t boil over or burn by removing it from heat as soon as it bubbles.
- Use fresh minced garlic for the best flavor; garlic powder won’t provide the same depth in the glaze.
- Let the chicken rest for a few minutes after grilling to retain juices and ensure tenderness.
