Description

  • 1 ½ pounds boneless skinless chicken thighs or breasts
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder

Honey Butter Glaze

  • 3 tablespoons butter
  • ⅓ cup honey
  • 1 garlic clove, minced

Topping

  • Chopped chives for topping


Instructions

  1. Preheat the grill. Heat the grill to the highest setting to ensure a good sear and even cooking on the chicken.
  2. Season the chicken. Pat the chicken dry and season all over with kosher salt, black pepper, smoked paprika, and garlic powder for a flavorful base.
  3. Grill the chicken. Place the chicken on the hot grill grates. Cook for 6 minutes on one side, then flip and grill for another 6 minutes until the chicken reaches an internal temperature of 165°F and is nicely charred.
  4. Prepare the honey butter glaze. While the chicken cooks, melt butter in a saucepan over medium heat. Add honey and minced garlic, stirring until the butter melts and the mixture begins bubbling. Remove from heat to prevent burning.
  5. Brush the chicken with glaze. Bring the glaze to the grill and brush the chicken liberally on both sides. Repeat brushing one or two more times for a sticky, flavorful coating.
  6. Remove and serve. Take the chicken off the grill and brush with additional honey butter glaze. Sprinkle with chopped chives and serve immediately with your favorite summer side dishes.

Notes

  • Use chicken thighs for juicier meat or breasts for a leaner option.
  • If you don’t have a grill, you can use a grill pan on the stovetop or broil in the oven.
  • Make sure the glaze doesn’t boil over or burn by removing it from heat as soon as it bubbles.
  • Use fresh minced garlic for the best flavor; garlic powder won’t provide the same depth in the glaze.
  • Let the chicken rest for a few minutes after grilling to retain juices and ensure tenderness.
