- ½ cup creamy peanut butter
- 4 ounce cream cheese, softened
- ½ tsp vanilla extract
- ½ tsp salt
- 2 cups powdered sugar
Chocolate Coating
- 1½ cups dark chocolate chips
- 1 tbsp vegetable oil
Instructions
- Prepare the Filling: Use a stand or hand mixer to blend together the peanut butter, cream cheese, vanilla, and salt in a medium-sized mixing bowl until fully combined and fluffy, about 5 minutes.
- Add Powdered Sugar: Gradually beat in the powdered sugar, using a spatula to scrape down the sides of the bowl as needed, until you have a light, tan, soft dough.
- Form Dough Balls: Cover a baking sheet with parchment paper. Form 1 inch balls out of the dough and place them on the cookie sheet. The dough will be slightly soft but should hold its shape once formed.
- Freeze the Balls: Insert a toothpick into the top of each ball and place the baking sheet in the freezer for 20 minutes to firm up the dough balls.
- Prepare Chocolate Coating: Line a second baking sheet with parchment paper. Melt the dark chocolate chips and vegetable oil together in a shallow bowl in the microwave, heating in 20-second increments and stirring between each until smooth and fully melted, about 1-2 minutes.
- Dip Buckeyes: Remove about 6 dough balls from the freezer and place them on the prepared baking sheet. Dip them one by one into the melted chocolate using the toothpick, swirling to cover all but a small circle on top. Allow excess chocolate to drip off and place them back on the baking sheet.
- Repeat Dipping: Continue dipping the remaining Buckeyes in batches of six until all are coated.
- Finish the Buckeyes: Remove toothpicks from the tops and smooth over the holes using a toothpick, offset spatula, or your finger for a clean finish.
- Set and Store: Return the Buckeyes to the freezer until set, up to 1 hour. Then store them in an airtight container in the refrigerator until ready to serve.
- Serving Suggestion: Serve Buckeyes chilled or at room temperature for best flavor.
