Dressing
- 1 1/2 Tbsp fresh lemon juice
- 1 1/2 Tbsp red wine vinegar
- 3 1/2 Tbsp extra virgin olive oil

- 1 1/2 tsp minced garlic
- 1/4 cup chopped cilantro
- 1/4 cup chopped parsley
- 1/2 tsp dried oregano
- Salt and freshly ground black pepper to taste
Instructions
- Make the dressing: In a small mixing bowl, whisk together fresh lemon juice, red wine vinegar, extra virgin olive oil, honey, minced garlic, chopped cilantro, chopped parsley, dried oregano, and season with salt and freshly ground black pepper to taste until fully combined.
- Toss the salad: In a large bowl, gently combine the sliced cucumbers, grape tomatoes, sliced red onion, and bite-sized avocado pieces. Pour the dressing over the salad and toss lightly to coat all ingredients evenly without mashing the avocado.
- Serve: Serve the salad shortly after preparing to enjoy the freshness and vibrant flavors. For best taste, avoid lengthy chilling of tomatoes and wait to cut avocado until just before serving.

- Use a mix of multicolor grape tomatoes for a visually appealing salad or stick with all red tomatoes for simplicity.
