Cookie Dough

  • 2 tablespoons butter
  • 3 tablespoons sugar
  • 1 large egg yolk
  • 1/2 teaspoon vanilla extract
  • 1/3 cup all-purpose flour
  • 2 teaspoons cornstarch
  • 1/2 teaspoon cream of tartar
  • 1/8 teaspoon baking soda
  • Pinch of salt

Cinnamon Sugar Coating

  • 2 teaspoons sugar
  • 1/2 teaspoon ground cinnamon


Instructions

  1. Prepare Butter: Place the butter in a medium-sized mixing bowl and microwave until melted.
  2. Combine Wet Ingredients: Add 3 tablespoons of sugar, egg yolk, and vanilla extract to the melted butter; stir well with a fork until fully combined.
  3. Mix Dry Ingredients: Stir in flour, cornstarch, cream of tartar, baking soda, and salt; mix until the dough is smooth and well combined.
  4. Shape Dough Balls: Form the dough into 2 equal-sized balls.
  5. Preheat Air Fryer: Set your air fryer to 350 degrees Fahrenheit and allow it to preheat.
  6. Prepare Cinnamon Sugar: On a plate, combine the remaining 2 teaspoons of sugar with 1/2 teaspoon cinnamon; roll each dough ball in the mixture to coat evenly.
  7. Arrange and Air Fry: Lightly flatten the coated dough balls and place them on a sheet of air fryer parchment paper a couple of inches apart. Place in the preheated air fryer and cook for 5 minutes.
  8. Cool Cookies: Carefully remove the basket from the air fryer but leave the cookies inside the basket to cool for at least 20 minutes to prevent breakage and allow them to firm up.

Notes

  • If the parchment paper curls during cooking and causes misshapen cookies or cookies baking together, immediately after air frying, place a small bowl or large glass slightly bigger than the cookie over each cookie and gently swirl it to reshape into a perfect circle.
  • Cooling the cookies longer will help them firm up and become less fragile.
  • Use air fryer parchment paper designed for air fryers to prevent sticking and to ensure even cooking.
  • Do not overcrowd the air fryer basket to allow proper air circulation for even baking.
