For the egg rolls:
- 3 medium ripe avocados

- 8-10 egg roll wrappers

- 2 teaspoons dried parsley

- 1 teaspoon dried chives

Instructions
- Prepare the avocado filling: Dice the avocados and add them to a mixing bowl along with lime juice, sun-dried tomatoes, red onion, cilantro, salt, and cracked pepper. Stir well, mashing the avocado slightly while keeping the mixture chunky.
- Assemble the egg rolls: Place about ¼ cup of the avocado mixture onto each egg roll wrapper. Fold the bottom of the wrapper over the filling, then fold in the sides and roll tightly. Dip your finger in water and brush it on the top corner of the wrapper before finishing the roll to seal the egg roll closed. Repeat for all wrappers.
